Adding an extra spice when adding pork belly makes the stew less heavy. While it’s possible to cook kimchi and pork belly together and then add broth, it’s better to boil the broth first before adding the kimchi and pork belly.
This way, the stew will be less heavy while maintaining its rich and hot flavor.
How to Cook Pork Belly, Kimchi Stew
Ingredients: 3-4 cups of anchovy and kelp broth, 1/8 of whole kimchi, 200g (7oz) of pork belly, 1/2 onion, 10cm (4in) of green onion, 2 green chili peppers
Seasoning: 1 tablespoon minced garlic, 1 tablespoon cooking wine, 1 tablespoon chili powder, 1 tablespoon soy sauce for soup, a pinch of salt, a pinch of pepper, and 1/2 tablespoon sugar.
1. First, prepare the broth by boiling water with dried kelp and anchovies.
Tip: After boiling for about 20 minutes, remove the kelp and anchovies.
2. Chop kimchi and pork belly to a nice, eatable size, then add it to the boiling broth.
Tip: For a neat texture, you can blanch the pork belly before adding it.
3. Add all the remaining ingredients.
Tip: You will get a better taste if you add about 1 teaspoon of gochujang (Korean chili paste).
4. Add some sugar and keep boiling the stew.

5. Serve the dish after boiling for about another 10 minutes.
Tip #1: You can also add mushrooms.
Tip #2: Adding crushed garlic will make the taste better.

You can use either thick or thin slices of pork belly. If you’re using thick pieces of pork belly,
blanch it or grill it to remove some of the grease before adding it to the stew.
