Almond Delight: Crafting the Perfect Crunchy Cookie!

Almond cookies are great cookies for house guests since you can simply pre-make the dough, freeze it, slice it, and bake it out.

It’s crunchy and gets more savory as you chew, offering a touch of elegance.

Even simpler to make is the diamants au chocolat et aux amandes.

Depending on your taste preferences, you can add different types of powder like green tea or cheese instead of chocolate, or simple sablés diamant aux amandes is still delicious.

Try this quick and easy recipe.

[Making Diamants au Chocolat et aux Amandes, Sablés Diamant aux Amandes]

Ingredients:

120g of butter

100g of sugar

50g of milk

220g of flour

15g of cocoa powder

4g of baking powder

100g of sliced almonds

1g of salt

1. First, whip the butter and sugar together thoroughly. Add the salt as well.

Tip: Use room-temperature soft butter.

2. Sift in all the dry ingredients.

Tip: Sifting prevents clumps and makes it easier to mix.

3. Once it starts to gather together, adjust the consistency by adding milk. Then add the sliced almonds.

Tip: Don’t add all the milk at once. Add it as you go when checking the consistency.

4. Shape the dough into a rectangular shape.

Tip: You can also scoop it out without freezing it and just put it on the sheet.

5. Wrap it in parchment paper and freeze it for about two hours.

Tip: If you plan to store the dough in the freezer, seal it in a ziplock.

6. Slice the dough to about a quarter-inch to 0.4-inch thickness and place it on the baking pan with space in between so they don’t stick together.

Tip: If the dough from the freezer is too hard to slice, leave the dough at room temperature for about 10 minutes before slicing.

7. Bake for 15 minutes in an oven set to about 338 degrees Fahrenheit.

Tip: Let them cool on the baking pan after baking to make them crispier.
