[Making a Coffee Pound Cake]
Ingredients:
200g of butter
200g of sugar
3 eggs
250g of whole wheat flour
15g of corn syrup
30ml of espresso
5g of baking powder
Topping:
50g of almonds
50g of raisins
1. Whip the butter thoroughly.
2. Gradually add sugar and corn syrup while whipping thoroughly.
3. Beat the eggs well and add them little by little while whipping.
Tip: Make sure to put the eggs out at room temperature to prevent separation.
4. Sift all the left dry ingredients and mix lightly to prevent clumping.
5. Add a shot of an espresso of your choice.
Tip: You can also use a strong instant coffee instead of espresso.
6. Mix the rest of the toppings as well.
Tip: You can add any nuts or dried fruits you prefer.
7. Fill it into a 7.9 inches pound cake mold.
Tip: It’s better to shape the top as the center is concave.
8. Bake in a preheated oven at 356 degrees Fahrenheit for about 40 minutes.
Tip: If the toothpick comes out clean after sticking it in, then it is fully cooked.
