How to Make the Best Golden Pumpkin Salad—Packed with Flavor

Here’s a delicious recipe for a golden, nutty pumpkin salad that’s sure to be a hit! This salad combines the natural sweetness of pumpkin with crunchy nuts and tart cranberries for a perfect balance of flavors. Follow these simple steps to get that vibrant golden color and a fantastic taste.

Ingredients:

  • 1 whole pumpkin
  • 2 ½ tablespoons mayonnaise
  • 1 ½ tablespoons sugar
  • ⅓ tablespoon salt
  • 100g dried cranberries (or raisins)
  • 30g pumpkin seeds
  • 70g walnuts
  • 70g almonds

Directions:

Step 1: Prep the Pumpkin

Start by cleaning and cutting the pumpkin in half. Tip: Pumpkins have a tough core, so avoid cutting through the seed section to make it easier. Once cut, scoop out the seeds with a spoon.

Step 2: Skin and Chop

Chop the pumpkin into smaller pieces. For a bright yellow salad, remove the skin, as the greenish tint from the skin can dull the pumpkin’s vibrant color.

 

Step 3: Steam the Pumpkin

Boil water in a steamer and steam the pumpkin for 12 minutes over medium-high heat until soft.

Step 4: Roast the Nuts

While the pumpkin is steaming, roast the nuts (walnuts, almonds, and pumpkin seeds) over medium heat for 1 minute to enhance their flavor.

Tip: After roasting, chop the large nuts like walnuts and almonds into smaller pieces.

Step 5: Mash and Mix

Once the pumpkin has finished steaming, let it cool slightly. Mash the pumpkin with a spoon or masher.

Add 2 ½ tablespoons of mayonnaise and 1 ½ tablespoons of sugar to the mashed pumpkin and mix well. Why add mayo? It gives the salad a smoother texture. For a creamier version, you can also add a splash of milk.

Step 6: Add the Crunch

Stir in the roasted nuts and dried cranberries (or raisins) to give your salad a crunchy and tangy bite.

Final Touch:

Mix everything together and serve! The combination of the sweet pumpkin and the nutty crunch makes this salad a fantastic snack or side dish.
