Beat the Heat: How to Prepare Abalone Samgyetang for a Healthy Summer

It feels like summer is just around the corner.

During the day, it gets pretty hot, making you feel like you could wear a tank top.

Today, we’re introducing a recipe for abalone ginseng chicken soup also known as samgyetang (Sahm-Gyay-Tahng) in Korean to help you maintain your energy. It’s an excellent dish to have in the springtime as it boosts your health.

Although the slightly greasy samgyetang soup is nice because it’s light, it might feel bland to those who like spicy food. So, if you make the finishing porridge with kimchi, you can enjoy a bowl of healthy food with a clean and exciting taste. The broth, which is boiled chicken, can’t be tasteless.

[How to Make Abalone Samgyetang]

Ingredients:

2 whole chickens

2 abalones

2 ginseng roots

5 cloves of garlic

4 jujubes

4 chestnuts

1/2 onion

10cm green onion

3 ginkgo nuts

2 liters of water

1. Add all the cleaned ingredients to the water. For abalone, scrub only the shell and the bottom with a brush and add them to the water.

Tip: You can also add dried chili peppers to bring out a slightly spicy flavor.

2. Once it starts to boil, reduce the heat and simmer for about an hour.

Tip: Adding 2 tablespoons of cooking wine can make it taste cleaner.

The completed abalone samgyetang is served with one chicken breast and one abalone. The front of the abalone has teeth, so it’s better to cut it off and eat it for a better texture.

After you’ve enjoyed your meal, immediately boil the kimchi porridge.

[How to Make Kimchi Porridge]

Ingredients:

3 cups of chicken broth

1 cup of soaked rice

3 tablespoons of minced onion

3 tablespoons of minced green onion

a handful of leftover chicken

1 abalone

1 ginseng root

1/2 cup of minced kimchi

Seasoning:

1 tablespoon of chili powder

1 tablespoon of minced garlic

1/2 teaspoon of sugar

1. Put the rice and all the minced ingredients into the boiling chicken broth.

Tip: Mixing in a little glutinous rice is also delicious.

2. Stir well while boiling; if it’s a bit bland, add a pinch of salt.

Tip: You can also stir-fry the kimchi and rice in a pan before adding the rest of the ingredients.

3. Once the rice is soft, it’s done.

Tip: If you want to make it quickly, don’t soak the rice; instead, add leftover rice.
