Madeleines are a simple and easy-to-make snack that I often whip up. Today, I decided to make lemon madeleines with a delightful lemony aroma.

How to Make Lemon Madeleines
This recipe yields about two standard madeleine pans worth.
Ingredients:
- 200g of sugar
- Zest of 1 lemon
- 3 eggs
- 50g of milk
- 200g of flour
- 6g of baking powder
- 200g of butter
Additional: 1 tablespoon of melted butter
1. First, whip the eggs thoroughly.
2. Add the sugar and mix it until it dissolves.
3. Sift in the dry ingredients and mix lightly.
4. Melt the butter in a double boiler.
5. Mix in the melted butter, add lemon zest and mix well. Wrap it up and refrigerate for at least an hour.
6. Grease the madeleine mold with the additional melted butter and fill the mold with the batter to about 70%.
7. Bake in a preheated oven at 356 degrees Fahrenheit for about 12 minutes.
Be careful not to overfill the batter in the mold, as it can overflow from the center.
Here is the simple lemon madeleine. Depending on your preference, you can add vanilla extract to make the flavor smoother and richer.
This one has a slightly crisp outside and a soft and fluffy inside.
It is an easy-to-make dessert that goes perfectly well with coffee or tea.
