Today, I’ll introduce how to make delicious, simple, and quick doenjang jjigae at home, just like in a restaurant.

The key point is to make the broth rich. Boil anchovy broth until it’s rich, then boil after adding plenty of ingredients. It’s so delicious that even if two people eat it together, they won’t notice if one disappears. That’s how perfect the doenjang jjigae will turn out.

You can add any ingredients, but onions, green onions, peppers, garlic, and tofu are essential. You can also add zucchini or mushrooms to improve the flavor.

Depending on your preference, add a bit of red chili paste. And don’t forget the chili powder – an essential seasoning that gives the stew its spicy kick.

How to Make Doenjang Jjigae

Broth: 4 cups of water, 20 dried anchovies, 1 piece of kelp (around 6 inches)

Ingredients: 2-3 tablespoons of soybean paste, 1/2 onion, 1 green onion, 2 peppers, 1 block of soft tofu, 1/2 of enoki mushroom, 1/2 of zucchini, 1 tablespoon of minced garlic, 1/2 tablespoon of red pepper powder

1. After boiling the broth ingredients for about 20 minutes, strain them. Then, dissolve the soybean paste.

Tip: Mixing half store-bought and half homemade soybean paste will give a better flavor.

2. Please add the rest of the vegetable ingredients.

Tip: Adding zucchini can taste better depending on your taste.

3. Remove any foam that rises to the surface.

Tip: Removing the foam ensures a clean taste. Adding 1 tablespoon of mirin or cheongju (rice wine) makes it even more delicious.

4. Add tofu and enoki mushroom for the final ingredients.

Tip: Simmer for a moment before serving.

Tip: It’s also delicious with pork or beef. In that case, sauté the ingredients before adding the broth and soybean paste.

Tip: Adjust the final seasoning with soy sauce or salt.

I prefer soft tofu over firm tofu because it’s easier to mix with rice.

You can also use sun dubu (soft tofu) to slice it into large pieces for easy scooping.
